The crema as a trademark
During preparation, the water is pressed through the coffee at high pressure (8 to 12 bar). The contact time with the water is only 20 to 25 seconds. Due to the brewing pressure, certain substances are dissolved very quickly from the ground coffee. The ground coffee acts as a filter for the water.
The result is a layer about 1 to 3 mm thick with a fine-grained, creamy consistency in light to dark brown: the crema. It is the trademark of a successful espresso or caffè crema and has nothing to do with milk foam. The "cap" looks appetizing and also preserves the flavors and aromas and the warm temperature in the cup.
